Ingredients:
- 1 1/2
cup chopped onions (1 block carb)
- 2 1/2
chopped peppers (1 block carb)
- 2
small zucchinis, trimmed and cubed (1 block carb)
- 1
eggplant, trimmed and cubed (2 blocks carb)
- 4
ripe tomatoes, cut in chunks (1 carb)
- 4
garlic cloves, minced
- 1/2
cup basil leaves
- 2
teaspoons olive oil (6 blocks fat)

Directions:

Sauté the onions in oil in large Dutch oven.

Add ingredients in the order listed letting each one
cook a bit before adding the next.

Simmer for about 1 hour (or more), add basil and garlic
about 15 minutes before the end of cooking time.

This is a variable recipe. You can add more of any
ingredient.

Serve this delicious vegetable mixture with 6 oz chicken
or 9 oz. fish for two servings of 3-block meals.
