Zone Diet - Spicy Middle Eastern Skewers

Ingredients:

Skewers:

  • 1 lb lean ground beef or lamb or mixture of the two
  • 1 large onion minced very fine
  • 2 very large bunches of parsley minced fine
  • 1 pinch of cinnamon
  • Salt and freshly ground pepper to taste

Vegetables Side Dish:

  • appropriate blocks of zucchini and tomatoes

Dipping sauce:

  • 1/4 cup of tahini
  • lemon juice to taste
  • small dash of water
  • dash of Tabasco
  • 1/4 tsp. minced garlic
  • chopped parsley for garnish

Directions:

Skewers:

  • Mix all of the above ingredients thoroughly. Then run the mixture through a food processor in batches to assure even mixing and a finer texture.

  • Mash small amounts of the mixture equally around about 32 wooden skewers that have been soaked in water for 20 minutes or use metal skewers. It will look as though you have long little sections of meat loaf around each skewer.

  •  Grill on a medium grill until done and juicy.

Vegetables Side Dish:

  • Grilled or steamed the vegetables to your liking.

Dipping Sauce:

  •  Mix all of the above ingredients together until smooth.

For block measurements you could have 3 small skewers or 2 large for 1P, then add appropriate block measurements for Carbs, using vegetables and add a small spoonful of tahini sauce over skewers for the fat. To serve this in a traditional manner you would place the meat in 1/2 large or 1 small whole wheat pita, stuff raw veggies (lettuce and tomato) inside and add tahini sauce. If you do this, make sure you adjust the Carb measurement accordingly.
