Zone Diet - Spicy Mexican Tofu

Ingredients:
- 24
oz. Extra Firm Tofu, cut into small cubes (check the label)
- 1 cup
chopped onion
- 2 1/2
cups undrained canned stewed tomatoes
- 1 1/4
cups canned kidney beans
- 2 2/3
tsps olive oil
- 2
garlic cloves
- 1
tbsp chili powder

Sprinkling of Parmesan cheese

Directions:

Sauté 1 cup of onion and 2 garlic cloves in 2 2/3 tsp of
olive oil until soft.

Add the undrained tomatoes and chili powder and bring to
a boil.

Boil vigorously, uncovered and stirring often, until
thick, about 8 mins.

Stir in the tofu. Add the kidney beans and heat through.
Remark: Serve two 4-block meals.
I found this very delicious because I love tofu.
