Zone Diet Spicy Mexican Tofu

Ingredients:
  • 24 oz. Extra Firm Tofu, cut into small cubes (check the label)
  • 1 cup chopped onion
  • 2 1/2 cups undrained canned stewed tomatoes
  • 1 1/4 cups canned kidney beans
  • 2 2/3 tsps olive oil
  • 2 garlic cloves
  • 1 tbsp chili powder
  • Sprinkling of Parmesan cheese

Directions:

  • Sauté 1 cup of onion and 2 garlic cloves in 2 2/3 tsp of olive oil until soft.

  • Add the undrained tomatoes and chili powder and bring to a boil.

  • Boil vigorously, uncovered and stirring often, until thick, about 8 mins.

  • Stir in the tofu. Add the kidney beans and heat through.

Remark: Serve two 4-block meals.
I found this very delicious because I love tofu.
