Ingredients:
- 2
cups chopped broccoli ( 1/2 block carb)
- 2
cups chopped mushrooms (1/2 block carb)
- 3/4
cup onions (1/2 block carb)
- 1 cup
chopped peppers (1/2 block carb)
- 1/4
cup chick peas (1 block carb)
- 1/2
cup egg substitute (2 blocks protein)
- 1 oz.
low fat mozzarella cheese (1 block protein)
- 1
teaspoon light mayo (1 block fat)
- 2
teaspoons slivered almonds (2 blocks of fat)

Directions:

Put veggies in a large casserole pan.

Mix egg substitute, cheese and mayo. Pour over
vegetables.

Sprinkle almonds over the top. Bake at 350 for 35 to 40
minutes.
